The Livermore Walnut
First grown in 1991 by the University of California at Davis, Livermore walnuts are 100% naturally red-skinned and only grown in California. Less than 2% of the world’s walnuts are Livermore reds, making them one of the rarest varieties on our planet. And if you're wondering why their called Livermore walnuts, these red walnuts were named after Robert S. Livermore (1926-1997) who was a computer entrepreneur, a supporter of the UC Davis walnut cultivation program, and a private walnut grower interested in unusual varieties.
Aside from their vibrant red color, Livermore reds are smaller but meatier than English or Black walnuts. A lower tannin content makes them less bitter while bringing out a creamy texture and natural walnut flavor. And because they have less astringents compared to other walnuts, they're easier to eat and won't leave a stinging sensation if you are usually sensitive to walnuts. Many say Livermore Reds have a sweet and buttery taste. Even more claim that it's their favorite walnut variety after just a few bites.
Livermore walnuts are a wonderful snack but they also add flair to salads or brighten up al-dente pastas. Their bright red color is absolutely eye-catching and makes Christmas, New Year's, and Valentine's day even more festive. We personally like to include them in our banana nut cupcakes, rustic sourdough breads, and coffee ice cream. Moreover, Livermore reds might even be healthier than other walnuts, and walnuts are already known to be the healthiest of all nuts.
