Walnut & Black Bean Taco Crumbles

A smoky, "meaty" taco filling made from walnuts and beans. Perfect for Meatless Monday!

Yields: 4 serving Prep Time: 5 minutes  Cook Time: 10 minutes 

What You'll Need

  • 1.5 cups walnuts
  • 1 can black beans (drained)
  • 1 tbsp taco seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp soy sauce
  • 1/4 cup water
  • Tortillas
  • Lime, radishes and cilantro (optional)

Steps

  1. Pulse walnuts and beans in a food processor until it looks like "crumbles" (don't over-process!).
  2. Sauté in a skillet with spices and soy sauce for 5 mins.
  3. Add water to moisten and cook until absorbed.
  4. Serve in charred tortillas with lime, sliced radish, and cilantro!
