What You'll Need
- 2 large artichokes
- 1 lemon
- 3 tbsp olive oil
- Salt & pepper
For Gremolata
- ⅓ cup finely chopped walnuts
- Zest of 1 lemon
- 2 tbsp parsley, chopped
- 1 garlic clove, minced
- 1 tbsp olive oil
- Pinch of salt
Steps
- Preheat oven to 400°F.
- Trim and halve artichokes; remove choke.
- Brush with olive oil and season.
- Roast cut side down 35–40 minutes.
- Mix gremolata ingredients.
- Spoon over roasted artichokes before serving.
