with Walnut Gremolata

Artichokes always feel impressive — but they’re surprisingly simple. The walnut gremolata adds crunch and bright flavor. Perfect for spring entertaining. 🌿✨🥂

What You'll Need

  • 2 large artichokes
  • 1 lemon
  • 3 tbsp olive oil
  • Salt & pepper

For Gremolata

  • ⅓ cup finely chopped walnuts
  • Zest of 1 lemon
  • 2 tbsp parsley, chopped
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • Pinch of salt

Steps

  1. Preheat oven to 400°F.
  2. Trim and halve artichokes; remove choke.
  3. Brush with olive oil and season.
  4. Roast cut side down 35–40 minutes.
  5. Mix gremolata ingredients.
  6. Spoon over roasted artichokes before serving.
