What You'll Need

  • 3 cups mixed root vegetables (sweet potato, parsnips, carrots), diced
  • 2 tbsp olive oil (for roasting)
  • Salt, pepper, and rosemary
  • For Pistachio Vinaigrette:
    • ¼ cup shelled California pistachios
    • ¼ cup olive oil
    • 2 tbsp white wine vinegar
    • 1 tsp maple syrup
    • 1 clove garlic

Steps

  1. Preheat oven to 400°F (200°C). Toss diced root vegetables with 2 tbsp olive oil, salt, pepper, and rosemary. Roast for 30 minutes, flipping halfway, until tender and lightly caramelized.
  2. Make Vinaigrette: In a food processor, blend all vinaigrette ingredients until the pistachios are finely chopped and the dressing is bright green and smooth.
  3. Transfer hot roasted vegetables to a serving dish.
  4. Drizzle generously with the Pistachio Vinaigrette just before serving.
