Warm Apple & Pistachio "Crumble" Bowl

Apples are still crisp this time of year, and honestly, I need a little warmth in the afternoons. This is like a deconstructed pie, but healthy enough for a snack (or breakfast—We won't tell!).

Yields: 1 serving Prep Time: 3 minutes  Cook Time: 5 minutes 

What You'll Need

  • 1 large crisp apple (sliced thin)
  • 1 tsp cinnamon
  • 1 tsp coconut oil or butter
  • 1 tbsp maple syrup
  • 2 tbsp crushed pistachios

Steps

  1. Melt the oil/butter in a small skillet over medium heat.
  2. Add the apple slices, cinnamon, and a splash of water. Sauté for 3–5 minutes until the apples are tender and slightly caramelized.
  3. Plate the apples and drizzle with maple syrup.
  4. Top with a generous handful of crushed pistachios for that signature green crunch.
