Toasted Almond & Cherry Salad

Brighten up your plate with this delightful Toasted Almond and Cherry Salad! Featuring crunchy California almonds, sweet cherries, and crisp greens with our homemade vinaigrette. It's the perfect light lunch or vibrant side dish.

What You'll Need

  • 4 cups mixed greens (spinach, arugula, etc.)
  • 1/2 cup pitted fresh or dried cherries
  • 1/4 cup Nonpareil Almonds
  • 2 tbsp crumbled goat cheese (optional)

For the Dressing:

  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • Salt and pepper to taste

Putting It Together

  1. Lightly toast the sliced almonds in a dry skillet over medium heat for 2-3 minutes, stirring constantly, until fragrant and lightly browned. Set aside to cool.
  2. In a small bowl, whisk together all the dressing ingredients until emulsified.
  3. In a large salad bowl, combine the mixed greens and cherries.
  4. Drizzle the dressing over the greens and toss to coat.
  5. Top with the toasted almonds and goat cheese before serving.
