Strawberry Pistachio Ricotta Toast

Sweet, simple, and feels a little fancy without trying too hard. Peak strawberry season + creamy ricotta + crunchy pistachios = spring on toast. 

Yields: 4 serving Prep Time: 10 minutes  Cook Time: 5 minutes 

What You'll Need

  • 4 slices sourdough bread
  • 1 cup whole milk ricotta
  • 1 cup fresh strawberries, sliced
  • 3 tbsp shelled pistachios, roughly chopped
  • 2–3 tbsp honey
  • Zest of ½ lemon
  • Pinch of flaky sea salt
  • Fresh mint (optional)

Steps

  1. Toast sourdough until golden and crisp.
  2. Spread ricotta evenly on each slice.
  3. Top with strawberries.
  4. Drizzle with honey.
  5. Sprinkle pistachios, lemon zest, and flaky salt.
  6. Garnish with mint and serve.
