What You'll Need
- 1 cup shelled, roasted, and unsalted pistachios
- 4 oz creamy Feta cheese, crumbled
- 1/4 cup full-fat Greek yogurt or Mascarpone
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
- 2 tablespoons extra virgin olive oil (plus more for drizzling)
- 1 clove garlic, roughly chopped
- 1/2 lemon, juiced
- Pinch of red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
Putting It Together
- Prep the Nuts: If your pistachios have skins, you can blanch them for 30 seconds in boiling water, then peel for a brighter green color (optional, but highly recommended!).
- Combine Ingredients: Place the pistachios, crumbled feta, Greek yogurt/mascarpone, parsley, mint, garlic, olive oil, and lemon juice into a food processor.
- Process: Pulse the mixture a few times to break down the pistachios, then process continuously, stopping to scrape down the sides, until the dip is mostly smooth but still has a slight, pleasing texture.
- Season: Taste and season with salt, pepper, and red pepper flakes. Feta is salty, so add extra salt cautiously.

Chill & Serve: Transfer the dip to a small serving bowl. Drizzle with a little extra olive oil and sprinkle with a few whole or roughly chopped pistachios for garnish. Serve with pita chips, raw vegetables, or crusty bread.
