Roasted Butternut Squash with Walnuts & Sage

Cozy fall favorite: roasted squash tossed with walnuts and crispy sage.

Yields: 4 - 6 servings  |  Prep Time: 10 minutes  Cook Time: 30 - 35 minutes

What You'll Need

  • 1 medium butternut squash, cubed
  • 2 tbsp olive oil
  • 1 tbsp fresh sage leaves
  • ½ cup walnuts, toasted
  • Salt & pepper

Putting It Together

  1. Preheat oven to 400°F (200°C).
  2. Toss squash cubes with olive oil, salt, pepper. Roast 30–35 min.
  3. In a skillet, fry sage leaves until crisp.
  4. Toss roasted squash with walnuts and sage.
  5. Serve warm.
