Roasted beets with almonds are a perfect winter side — sweet, nutty, and full of color. Weeknight-friendly but fancy enough to impress!

What You'll Need
- 4 medium beets, peeled & cubed
- 2 tbsp olive oil
- Salt & pepper
- 2 tbsp crushed almonds
- Optional: balsamic drizzle or fresh thyme
Steps
- Preheat oven to 400°F (205°C).
- Toss beets with olive oil, salt, and pepper.
- Roast on a baking sheet for 30 minutes.
- Add almonds and roast 10–15 more minutes until tender and lightly toasted.
- Finish with balsamic drizzle or fresh thyme if desired. Serve warm.
