Roasted Beets with Almonds

Roasted beets with almonds are a perfect winter side — sweet, nutty, and full of color. Weeknight-friendly but fancy enough to impress!

What You'll Need

  • 4 medium beets, peeled & cubed
  • 2 tbsp olive oil
  • Salt & pepper
  • 2 tbsp crushed almonds
  • Optional: balsamic drizzle or fresh thyme

Steps

  1. Preheat oven to 400°F (205°C).
  2. Toss beets with olive oil, salt, and pepper.
  3. Roast on a baking sheet for 30 minutes.
  4. Add almonds and roast 10–15 more minutes until tender and lightly toasted.
  5. Finish with balsamic drizzle or fresh thyme if desired. Serve warm.
