Pistachio-Crusted Roasted Asparagus


Crunchy, salty, and vibrant. This roasted asparagus uses crushed pistachios for a gourmet crust.

Yields: 3 serving Prep Time: 5 minutes  Cook Time: 12 minutes 

What You'll Need

  • 1 bunch asparagus
  • 1/2 cup pistachios (finely crushed)
  • 2 tbsp olive oil
  • 1 tsp lemon zest
  • pinch of salt

Steps

  1. Toss asparagus with oil and salt on a baking sheet.
  2. Press the crushed pistachios onto the top half of the spears.
  3. Roast at 400°F for 10-12 mins until the nuts are golden.
  4. Finish with lemon zest!
