One-Bowl Strawberry Almond Cake


A moist, dense cake made with almond flour and loaded with fresh spring strawberries.

Yields: 8 serving Prep Time: 10 minutes  Cook Time: 35 minutes 

What You'll Need

  • 1.5 cups almond flour
  • 3 eggs
  • 1/2 cup honey (or maple syrup)
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1 cup sliced strawberries
  • 1 cup chopped or whole almonds

Steps

  1. Whisk eggs, honey, and vanilla.
  2. Stir in almond flour and baking soda.
  3. Fold in half the strawberries and all the almonds
  4. Pour into a 9-inch greased pan, top with remaining berries.
  5. Bake at 350°F ($175°C$) for 30-35 mins.
