What You'll Need

  • 1 cup rolled oats
  • ½ cup dried cranberries
  • ½ cup shelled California pistachios, roughly chopped
  • ½ cup almond butter (or other nut butter)
  • ¼ cup honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt

Steps

  1. In a medium bowl, combine oats, dried cranberries, and chopped pistachios.
  2. Add almond butter, honey/maple syrup, vanilla extract, and salt.
  3. Mix well with a spoon or your hands until all ingredients are thoroughly combined and a sticky dough forms.
  4. Roll the mixture into bite-sized balls (about 1-inch in diameter).
  5. Place the energy bites on a plate or baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up. Store in an airtight container in the refrigerator.
