What You'll Need
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder, ½ tsp baking soda, ½ tsp salt
- 2 eggs
- ½ cup butter, melted
- ½ cup sour cream or Greek yogurt
- Zest of 1 orange, ¼ cup orange juice
- 1 cup fresh or frozen cranberries
- For Walnut Streusel:
- ½ cup chopped California walnuts
- ¼ cup flour, ¼ cup brown sugar, 2 tbsp melted butter
Steps
- Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
- Make Streusel: Combine walnut streusel ingredients until crumbly. Set aside.
- In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk eggs, melted butter, sour cream, orange zest, and juice.
- Combine wet and dry ingredients. Fold in cranberries.
- Pour half the batter into the pan, sprinkle with half the streusel. Add remaining batter, top with remaining streusel.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
