Cranberry-Orange Loaf with Walnut Streusel

What You'll Need

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder, ½ tsp baking soda, ½ tsp salt
  • 2 eggs
  • ½ cup butter, melted
  • ½ cup sour cream or Greek yogurt
  • Zest of 1 orange, ¼ cup orange juice
  • 1 cup fresh or frozen cranberries
  • For Walnut Streusel:
    • ½ cup chopped California walnuts
    • ¼ cup flour, ¼ cup brown sugar, 2 tbsp melted butter

Steps

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  2. Make Streusel: Combine walnut streusel ingredients until crumbly. Set aside.
  3. In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
  4. In a separate bowl, whisk eggs, melted butter, sour cream, orange zest, and juice.
  5. Combine wet and dry ingredients. Fold in cranberries.
  6. Pour half the batter into the pan, sprinkle with half the streusel. Add remaining batter, top with remaining streusel.
  7. Bake for 50-60 minutes, or until a toothpick comes out clean.
