Citrus & Pistachio Salad

Bright, fresh, and exactly what winter needs. This citrus & pistachio salad is juicy, colorful, and perfect as a side or light lunch. No cooking, all sunshine!

What You'll Need

  • 2 oranges or mandarins, peeled & sliced
  • 1 grapefruit, sliced
  • 2 tbsp pistachios, roughly chopped or crushed
  • 1 tbsp olive oil
  • 1 tsp honey (optional)
  • Pinch of salt
  • Optional: fresh mint or arugula

Steps

  1. Arrange citrus slices on a plate or bowl.
  2. Drizzle with olive oil and honey.
  3. Sprinkle pistachios and a pinch of salt.
  4. Add mint or arugula if desired. Serve immediately.
