May stone fruit has arrived! 🍑 These apricots are perfectly tart, especially when paired with a salty pistachio crust. It’s light, honey-glazed, and basically spring on a plate.

What You'll Need
- 1 sheet puff pastry
- 6 fresh apricots (halved)
- 1/2 cup crushed pistachios
- 3 tbsp honey
- 1 egg (wash)
Steps
- Roll out pastry
- Arrange apricots on top
- Sprinkle with pistachios
- Brush edges with egg wash
- Bake at 400°F for 20-25 mins
- Drizzle with honey while warm!
