Apricot & Pistachio Tart

May stone fruit has arrived! 🍑 These apricots are perfectly tart, especially when paired with a salty pistachio crust. It’s light, honey-glazed, and basically spring on a plate.

Yields: 8 slices Prep Time: 15 minutes  Cook Time: 25 minutes 

What You'll Need

  • 1 sheet puff pastry
  • 6 fresh apricots (halved)
  • 1/2 cup crushed pistachios
  • 3 tbsp honey
  • 1 egg (wash)

Steps

  1. Roll out pastry
  2. Arrange apricots on top
  3. Sprinkle with pistachios
  4. Brush edges with egg wash
  5. Bake at 400°F for 20-25 mins
  6. Drizzle with honey while warm!
